Our top grade Ti Guan Yin is completely processed by hand in Anxi, Fujian China. Picked on March 12th 2019 the leaves are deep emerald green and tightly rolled.
On the nose the dry leaf smells floral with the slightest hint of fresh uncut green pepper.
On the nose warm leaf smells of cooked asparagus with a hint of sea air
Infusion 1 produces a bright clear tea liquor which is aromatic and tastes of buttered baby spinach, but an unsalted butter. The flavor is full with a long finish.
Infusion 2 the leaves have fully opened up producing an even brighter golden amber tea liquor. Baked scallops on the nose with notes of cooked greens. Very clean tasting.
This tea can be infused 5-7 times using the traditional gongfu method and 2-3 times if you’re using western methods.
